Now, I’m really excited about this post. I wanted to make this and post yesterday but, a) super samurai drank ALL the egg nog, and b) I was feeling like crap. In any event, it was getting posted, even if it was a day late. When I was writing this recipe, I knew everyone would enjoy it, and thank me later.
Egg Nog Bread Pudding.
(Now, the measurements I’m giving you is for double the recipe since I made a big pan of it. Adjust as necessary.)
1 loaf of bread(I used honey wheat) cut into cubes or tore into small pieces
1/2 cup margarine melted
2 teaspoons ground cinnamon, separated
12 eggs
1 1/2 cups sugar
4 teaspoons vanilla extract
2 cups hot milk
4 cups egg nog
handful sliced almonds
Heat oven to 375.
In a large bowl, combine bread cubes, melted margarine, and 1 tsp. cinnamon; mix well, and transfer into lightly greased baking pan.
Use the same bowl to beat the eggs. Stir in sugar and vanilla until sugar is dissolved. Slowly whisk in he hot milk. Whisk in egg nog. Pour egg nog mixture over bread cubes. Sprinkle with remaining cinnamon and almonds. Set aside for 5 minutes for bread to soak in mixture for at least 5 minutes.
Bake in preheated oven for 35-40 minutes, or until a knife inserted into center comes out clean.
As you see in the pictures, really easy to make, and not a huge mess baking wise, which I like. I hope you enjoy it!
