It’s Tasty Tuesday!
In this episode, I decided to share a recipe I love making when we are craving veggies!
My Vegetable Lasagna.
Now, I don’t have measurements to this recipe because we make it different each time. I do have the list of food we use to make the dish. Really simple, and sometimes, I make it ahead of time if it’s a busy week. Here’s the list!
Oven Bake Lasagna Noodles
Shredded Carrots
Zucchini
Mushrooms
Onions
Butternut Squash
2 bags frozen broccoli
2 bags frozen califlower
2-4 cans peas
2-4 cans diced tomatoes
Ricotta Cheese or Cottage Cheese
1-2 eggs
Italian dressing packet
Olive oil
Salt and pepper
Any kind of sauce of your choosing(we really like red vodka sauce or alfredo sauce)
2-3 bags mozzarella cheese
1 bag of lays potato chips
First, in a bowl, mix the ricotta/cottage cheese, italian seasoning, and eggs. Then chop any of the veggies that aren’t diced or shredded. Toss in oil, salt, and pepper. Sautee in a pan until soft. Then in a casserole pan, pour a little amount of sauce at the bottom, and layer the noodles in the pan. Then spread the cheese mixture on top of that. Then add the veggies on top. Continue that until you get to the top. Try to leave a half inch for your topping. Top with cheese and chips. Bake at 375 for 45 minutes to an hour.
