Today I have a new favorite with my kids. It started as a dish a childhood friend made for her family, and then I modified for my kids, and a little healthlier.
Taco Salad Casserole
1 bag of Dorito Chips or Torilla Chips
1-2 pounds of Ground Turkey or Chicken
2 Cans Corn
2 Cans Black Beans, Drained and Rinsed
4 Bags of Mexican Flavored Cheese or Cheddar Cheese
2 Jars Salsa
Lettuce
Tomatoes
Onions
Olives
Sour Cream
Brown Meat and season with salt and pepper. Drain if needed. Crush up bag of chips. Not to crumbs, but to make smaller. Open cans of corn and beans, and drain thouse. In a mixing bowl, mix both together. Grease a casserole dish with non stick spray, and heat you over to 350.
Began to layer the ingredients. Chips, Meat, Corn/Beans Cheese, Salsa. You should be able to get two layers. Cover with more cheese. Bake for 30-45 minutes or until cheese is melted and top layer of cheese is a little crunchy.
Meanwhile, chop up tomatoes and onions. When serviing, top with lettuce, tomatoes, onions, olives, and sour cream.
The kids love it. It’s real simple to make, and may take 45 mins tops to make from beginning to end. I hope you enjoy it as much as we do!
