Tasty Tuesday. It’s about that time again!!!!!!

This recipe is something I make during the summer, for the kids to snack on. It was a great way to get them to try a new veggie without them knowing it. I didn’t know how well they would take to zucchini in anything, but this recipe was a keeper.

I love making it, because not only can it be a dessert but it can be a breakfast loaf too. Kids love it because it’s sweet and tasty.

Zucchini Blueberry Bread

1 1/3 cups agave syrup or 1 1/2 cups sugar
1/3 cups brown sugar
3/4 cups olive oil
2 eggs
2 cups flour
3/4 teaspoons baking powder
3/4 teaspoons baking soda
1/2 teaspoon salt
2 1/2 teaspoons cinnamon
3/4 cups zucchini
3/4 cups blueberries
3/4 cups walnuts(optional)

Preheat oven at 350 degrees. Mix sugars, oil, eggs, and mix. In a different bowl mix flour, baking powder, baking salt, salt and cinnamon. Add wet ingredients to dry ingredients. Fold in zucchini, blueberries, and nuts. Divide mixture into two greased pans. Bake for 55 minutes or until toothpick comes out clear.
