Tasty Tuesday: Homemade Panera Sandwich with tomato soup

In this week’s edition, I’m posting one of my favorite new recipe I created by accident.

I’ve been on a veggie kick as of yet. I mean in reality I love veggies. Raw, sauteed, roasted, baked, you name it, I’m there. I have a short list of veggies I won’t eat, but it’s ok, eating the majority of them is awesome right?

Well, I eat sandwiches a lot. Bread will probably be the death of me, but I figure if I try to keep it as healthy as possible I should be ok.

I combined one of my favorite sandwiches as a kid with some veggies. If you read my posts on facebook, you would’ve saw me talking about it with a glass of wine a couple weeks back.

Veggie Grilled Cheese Sandwich

2 slices of texas style toast
slices tomatoes
2-4 slices of cheese(I used cheddar and pepperjack)
Italian Dressing
Avocado, sliced
Sliced Olives(optional)
Butter

Place on slice of bread on the cooking space. Build your sandwich, avocados, tomatoes, cheese, dressing, olives, cheese, tomatoes, and avocados. Butter the other slice, and top the sandwich. Grill the sandwich, with that slice down first. Butter the other side while it’s grilling. Make sure to press the sandwich down while browning. Once it’s grilled and browned, remove, slice, and enjoy!

I love this sandwich for lunch, because I don’t have to share. My kids can’t stand this sandwich but I love my veggie sandwiches!
