On to todays recipe!
I wanted a fulling meal, but no mess and no oven. Gotta love slow cookers. I saw a recipe for meatloaf in the slow cooker, and cheesy meatloaf. I said ‘lets combine the two!’
Cheesy turkey meatloaf with veggies
3 pds of ground turkey/beef/bison
2 eggs
1.5 cups plain breadcrumbs
1/2 cheddar cheese
1/2 colby jack cheese
1.5 cups milk
Seasonings (sea salt, onion powder, pepper, celery salt)
2 cups sherry cooking wine
1 can diced tomatoes (drained)
1 can sweet peas (drained)
1 can artichoke hearts (drained)
Sauce:
1.5 cups ketchup
Brown sugar
Take ingredients 1-7 and mix in a large bowl. Once mixed well, spray your slow cooker with non stick spray.
Take a handful of the meat and make a flat layer on the bottom of the dish. Next, put the cheese on top of that layer. Then take the remaining meat and build it around the mountain of cheese.
Once you have made it into a loaf, take each vegetable listed, and pour around the meat. Once you’ve put in all in the cooker, you’ll add the wine for flavor and moisture, cause everyone hates dry meatloaf. Lol.
Turn on high for 4.5 hours. Check to see if it needs longer, 6 hours max. Just walk away.
Meanwhile, you take your ketchup and pour it into a medium bowl. Add brown sugar to taste and mix together until smooth. Add to the top of the meatloaf.
Serve after turning the cooker off for 20 minutes. I made mashed potatoes but a salad goes good too!
